* Marinated Jumbo Sweet Shrimp with Sea Urchin and Caviar
* Yellowtail Tartar with Spicy Filo and Ponzu Dressing
* Barley Miso marinated Spring Chicken roasted on Cedar Wood
* Sakesan Black Cod Miso Yaki in Hoba Leaf
* Chocolate Mousse, Chocolate Crunch and Raspberry Gelee, Okinawa Potato Doughnuts served with Kuromitsu, Tofu Mousse, Torched Plum and Harumaki Paper, and Petit Fours
